Welcome to Birch & Surkaj

A plate of Læsø, every visit.

We gather seaweed from Bovet, shrimp from Vesterø Harbour, herbs from the garden behind the house, and salt from the boiling huts on Rønnerne. The rest comes from the island’s small farmers. The menu changes with the weeks — sometimes with the days.

01 · Ingredients from the island

85% of what we serve comes from Læsø or the sea around the island. The rest we bring in from Vendsyssel.

02 · The family behind it

Run by Mille and Steffen Brink since 2019. Mille in the kitchen, Steffen in the dining room — and two children who lay tables at weekends.

03 · Quiet surroundings

42 seats, no background music louder than conversation, an open hearth, and a view across the fields and the church through eight small windows.

Five courses, one story.

Our evening menu is set: five servings from starter to a small sweet, composed around the week’s catch and harvest. 695 DKK. Wine pairing 495 DKK.
